Forget the ‘big city,’ everyone who’s ever been to the North Country knows where the best food is really at: Upstate New York! Now, the whole world is going to find out some of what this area has to offer, thanks to Billy Trudsoe, a local chef competing on Season 21 of Gordon Ramsay’s ‘Hell’s Kitchen’ (‘Hell’s Kitchen: Battle of the Ages’).

Meet the Chef: Billy Trudsoe
According to an article from the Post-Star, Trudsoe began working in kitchens when he was 13 years old and living in Chestertown, NY. Much of his 25-year career was spent cooking in restaurants on and around Lake George, such as Blue Water Manor, The Algonquin, and The Chateau on the Lake; many of these restaurants still carry his touch through the recipes they use. His cooking style is unmatched, and his love for Lake George can be felt not only through his dishes, but through the pride in his words when he speaks about the area.
In 2021, Trudsoe and his wife moved to Melbourne Beach, Florida, where he served as the executive chef at Ocean 302, a farm-to-table gastropub. It wasn’t long, however, before he decided to pursue his real dream: appearing on ‘Hell’s Kitchen,’ the television show run by his idol Gordon Ramsay.
After months of intensive auditions and interviews, he landed a spot on ‘Battle of the Ages,’ and the rest is history. Now, his dream is to showcase his Adirondack-grown talent and take it all the way to the top, landing a spot as a head chef at one of Ramsay’s restaurants.
He hasn’t forgotten his roots, however: on Trudsoe’s Instagram, @adkchef, you’ll find a poem about the beauty of and his love for Lake George, which he wrote when he was overseas during the pandemic. He will also be appearing at Bolton Landing Brewing Company on October 6th from 6-10 PM for a watch party of the next episode of ‘Hell’s Kitchen.’
